The story
Pierre Caillet holds the titles of Meilleur Ouvrier de France and Compagnon des Devoirs Unis, but calls himself first and foremost a gardener. With his wife Cécile, he runs Maison Caillet in the village of Valmont, a short drive from Fécamp in the Pays de Caux. The restaurant earned a Michelin star for its refined, vegetable-forward cooking that draws directly from the couple’s potager.
“Respect of the land and Nature, because without them no quality cuisine is possible,” says the chef. His menus change with the seasons, built around fruit, vegetables and herbs from the garden, complemented by local meats and terroir products from partner producers. The result is a creative, plant-led French cuisine that surprises with its clarity and depth. Michelin’s star – awarded for “high quality cooking” – recognises this honest, precise approach.
One of the most memorable ways to dine at Maison Caillet is the “Table côté cuisine”. Guests are seated inside the kitchen itself, watching the chef and his team prepare each dish in real time. The experience unfolds as a sensory journey: the sound of simmering pots, the aroma of fresh herbs, the sight of raw ingredients transformed into plates of understated elegance. It is a rare, unscripted glimpse behind the pass.
Cécile Caillet oversees the atmosphere of the house, which also includes five intimate guest rooms. The team – from second chef Titouan Foucault to the front-of-house staff – works with a shared sense of warmth and solidarity. “The same values that we share with the team,” says Cécile. “Receiving our guests with sincerity and professionalism.” Cooking classes and weekend gastronomic packages are available for those who want to deepen their connection to the place.
Whether you come for the Michelin-starred lunch or book the kitchen table for an evening, Maison Caillet offers a quietly compelling taste of modern Normandy cooking – grounded in the soil, guided by craft.
