The story
Auberge de la Mine sits in the heart of a former mining town, on the edge of the Andaine forest in La Ferrière-aux-Étangs. The building itself was the mine canteen until 1970, and when Catherine and Hubert Nobis opened the restaurant in 1991, they preserved its original vocation of hospitality while transforming it into a destination for refined dining. The interior has been updated with a contemporary decor, balancing comfort and elegance, and the calm, bucolic surroundings put guests at ease from the moment they arrive.
Chef Hubert Nobis crafts a cuisine that is both passionate and inventive, drawing primarily on organic or sustainably farmed produce from the Normandy bocage. This dedication to local, seasonal ingredients defines his classic cuisine—elevated by creativity but always true to the terroir. The menu changes regularly to reflect what the land and the seasons offer, and a vegetarian version is always available, ensuring that every guest can experience the full range of flavours.
Holding a Michelin star since 2008, Auberge de la Mine is recognized for its consistent high-quality cooking that blends tradition with a spirit of invention.
