The story
La Conciergerie sits in the two-hectare park of the Château de Bac-Saint-Maur, at the edge of Sailly-sur-la-Lys in the Flemish countryside. The name comes from the building’s original purpose — the estate’s conciergerie — and the setting is remarkably quiet: a view of the château and its grounds from every table. Chef Guillaume Riffaut, a Saillysien by adoption, runs the kitchen with a clear philosophy: market-driven cooking that is natural, seasonal, and local, served at accessible prices.
Riffaut trained at the lycée hôtelier d’Orchies and spent six years at the restaurant of the Hippodrome du Croisé-Laroche in Marcq-en-Barœul before opening La Conciergerie. In 2024, he was awarded the title of Maître Restaurateur by the Prefect of Pas-de-Calais, a recognition of his commitment to traditional, homemade cuisine. The following year, the restaurant was awarded a Bib Gourmand in the Michelin Guide France 2026, a nod to its quality and value.
The menu is deliberately short and changed regularly, following the rhythm of the produce. Riffaut works with local growers and artisans from the region, building plates that highlight the best of Flemish terroir. The cooking is creative but grounded — no fuss, no unnecessary flourishes. The result is a Modern Cuisine that feels both refined and honest.
The dining room is calm and welcoming, with outdoor seating when the weather allows. The restaurant can also be privatised for private parties or professional receptions, accommodating up to 34 guests. Whether for lunch or dinner, La Conciergerie offers a quiet escape into the gentle landscape of the Lys riverbanks, where the food speaks for itself.
