The story
In the heart of Fougères, L'EssenCiel by Jean-Marie Baudic brings together a young, talented team under the guidance of a celebrated chef. At the stoves, chef Clément Tarin crafts seasonal modern cuisine that is both sincere and inspired, while host Geoffrey Belhache welcomes guests with generosity and attention. The restaurant is part of the Bleu-Blanc-Cœur initiative, highlighting quality local products with respect for taste, the land, and its growers. This commitment, alongside its recognition by the Michelin Guide, marks L'EssenCiel as an accessible yet refined address where terroir meets modernity and conviviality.
L’EssenCiel offers two distinct ways to experience the kitchen. At lunch, Tuesday through Saturday, the Menu du Marché changes weekly, built around fresh, local Bleu-Blanc-Cœur ingredients – a generous and gourmet pause for the midday break. For a more spontaneous discovery, the Nuances de Ciel menu is designed without a fixed carte, imagined each day by the team. Guests choose between four or five courses, letting the rhythm of the seasons and the chef’s inspiration guide the meal. Wine pairings are also available, and dietary preferences are carefully respected.
Dining at L’EssenCiel is about more than the plate – it’s a sharing of tastes, values, and commitments. The atmosphere is described as warm and soothing, a space where the sincerity of the cooking is matched by the attention of the team. The restaurant can be entirely privatized for family celebrations or corporate events, and also hosts monthly cooking classes on the first Thursday of each month, where participants prepare a full seasonal menu and enjoy a convivial dinner around their creations.
