Emmanuel Champion and his wife Sylvie welcome guests to La Bartavelle in the heart of Goult. Emmanuel’s cooking is rooted in local products and Mediterranean inspiration. Spring brings green asparagus gratinéed with parmesan alongside roasted saddle of lamb, finished with a lemon and olive gremolata. Summer means clafoutis with cherries and goat’s milk curd, served after wild fish cooked with sun-ripened vegetables. When the weather turns, the menu expands with game from nearby hunts, paired with mushrooms and Luberon truffles.

The Cuisine

The menu changes with the seasons, always drawing from the region’s best. Recent dishes include a marbré of duck foie gras with artichokes and a meat-juice vinaigrette, fresh seasonal asparagus, and a fillet of duck (Perle des Dombes) cooked skin-side down with spring cabbage, artichokes, and a jus with black truffle shavings. Wild fish appears with crushed potatoes, leeks, and a morel broth. A French lamb gigotin is spiced with Espelette pepper and served with a potato-and-onion croustillant, cumin, asparagus, and a gremolata jus. Desserts highlight chocolate, lemon tart with Chiboust cream and verbena ice cream, or a Breton sablé with local strawberries, vanilla crème brûlée, rhubarb compote, and strawberry sorbet.

The Setting

Goult is a perched village with panoramic views of the Luberon massif. La Bartavelle sits on a quiet street, offering outdoor seating for warm Provençal evenings. The village itself has a bakery, grocery, butcher, and café – a genuine slice of Provençal life away from tourist crowds. A short walk up to the Moulin de Jerusalem rewards with sweeping vistas of Bonnieux, Lacoste, Ménerbes, and Saignon.

Emmanuel and Sylvie’s dedication to seasonal, local cooking earned the restaurant a Michelin Recommended distinction – a reflection of the care that goes into every plate.
