The duo of Sébastien Blanchard and Deborah Marchesani (ex-Hugo and Co, Brigade du Tigre in Paris) set up shop on the edge of the Luberon region and took over this village bistro in April 2022. Seated up high on the terrace under the bamboo awning, whose utter stillness is only perturbed by the fountain lapping away below, we savor their southern market cooking. On this summer day, we began the meal with a refreshing blini topped with cucumber, lemon cream and trout roe; followed by cod ballotine paired with mussels from the Camargue; or a generous grilled Black Angus steak served bloody with roasted Hasselback potatoes; and, to round out the meal, goat cheeses from La Fromagerie de Léa and honey from Goult, or an irresistible cherry clafoutis served with a scoop of homemade vanilla ice cream. // Noël Flantier
