Goult, a hilltop village in the Luberon, is surrounded by olive groves, vineyards, and oak forests. Its narrow streets and stone houses lead to Le Carillon, a restaurant that captures the essence of Provencal living. The dining room is refined, and the terrace opens in good weather, offering a pleasant spot to enjoy a meal.

The kitchen serves inventive dishes rooted in the great tradition of Provence. Seasonal and local products are at the heart of the menu, which changes with the market. A lunch menu at €35 offers a choice of two starters, two mains, and two desserts, renewed daily. The carte menu includes starters like candied leek with artichoke barigoule, pan-fried duck foie gras, or monkfish carpaccio; mains such as seabass with green peas, John Dory with chorizo, or grilled veal; a cheese selection from affineur Romain Dumond; and desserts like chocolate ganache, basil-strawberry biscuit, or homemade sorbets.
