Caffé César L'initial – Contemporary Provençal Cuisine in Grasse

Two Chefs, One Kitchen

In the village of Opio, just outside Grasse, Caffé César L'initial brings together two chefs with very different backgrounds. Thierry Molinengo trained at the Hôtel de Paris in Monaco, Le Manoir aux Quatre Saisons in England, and Le Grand Véfour in Paris. Frédéric Bogé worked with Marc Meurin in Lille and spent 15 years on the Mediterranean coast, including at Mas Candille with Serge Gouloumès. Here, they share a single kitchen, cooking side by side in full view of the dining room.

The result is contemporary cuisine that draws deeply on the Provençal terroir. The menu changes weekly, shaped by what the chefs find at the market and by the rhythm of the seasons. They describe their approach as French and contemporary, built on respect for the product and precision of flavour, without being strictly locavore. The cooking is open to wherever the best ingredients come from.

Two Experiences in One

Caffé César operates as both a brasserie and a gastronomic destination. The main dining room, a 120-square-metre space with a large shaded terrace, serves the restaurant’s emblematic Mediterranean dishes in a warm, convivial setting. Service runs continuously, making it a natural gathering place for the village.

Alongside the brasserie is L'Initial, a more intimate table reserved for the chefs’ gastronomic signatures. Guests sit at a solid elm table, under warm lighting, and are offered a custom menu that evolves with their tastes. The experience is designed to engage all the senses, with bespoke porcelain, glassware, and a personal wine cellar curated by head sommelier Guillaume Jeannès.

A Michelin-Recognised Address

The restaurant has earned a place in the Michelin guide, a recognition that reflects the precision and authenticity of the cooking. The chefs’ philosophy is simple: put heart into the plate and let the ingredients speak. The wine club, Le Club des Vins, extends this attention to detail, offering members complimentary glasses with each meal and access to private tasting evenings.

From a six-hands dinner with chef Serge Gouloumès to the daily rhythm of the brasserie, Caffé César L'initial is a restaurant that moves with the seasons and the market, never settling into routine.
