The story

Maison Fantin Latour – Stéphane Froidevaux: Michelin-Starred Modern Cuisine in Grenoble

A Table Rooted in the Alpine Terroir

At Maison Fantin Latour in Grenoble, Chef Stéphane Froidevaux orchestrates a cuisine that is both a homecoming and an exploration. His cooking is shaped by a childhood spent on a farm near Besançon and a deep, ritualistic connection to the surrounding mountains. From March to November, the Chef forages wild plants at the Col du Lautaret, an anchor for his creative process. This modern cuisine is not about invention for its own sake, but about translating what the land gives into a colourful, emotive plate.

The restaurant occupies a neo-classical 19th-century manor, surrounded by a large garden where chickens and guinea fowl roam, reinforcing the Chef’s commitment to a natural, ethical ecosystem. This setting, in the heart of Grenoble, houses two distinct experiences: the Michelin-starred Table Gastronomique, served only at dinner from Tuesday to Saturday, and the more casual Brasserie du Fantin for lunch, recognized with 2 toques by Gault & Millau.

The Philosophy of the Plate

Stéphane Froidevaux describes his approach as a "gourmet score, an ode to the mountain and to plants." He aims to celebrate beauty and goodness in harmony with the environment and the seasons. His cuisine is described as ephemeral, creative, and in symbiosis with time and locality. Each of the three menus offered at the Table Gastronomique is a sensory parenthesis, an invitation to reconnect with the essence of taste. The experience is further elevated by a wine list that champions small, independent producers from the Isère region, a reflection of the Chef’s role as an Ambassador of Isère wines.

More Than a Meal

Beyond the dining rooms, Maison Fantin Latour extends its hospitality into private salons for business or family events, offering bespoke menus. For those who wish to take the experience home, "Le Cellier" allows guests to order the Chef’s signature dishes and curated gourmet products. The restaurant also hosts wine and cooking workshops, offering a deeper dive into Froidevaux’s universe, where the values of recycling, preserving, and caring are as important as the flavours on the fork.
