In the small Alsatian village of Guémar, near Colmar and the Route des Vins, Manon Nasti and Lucas Di Palma have brought new life to a family home dating back three centuries. Behind a grand gate at the end of a quiet impasse, Ma.Maison is a domain of three distinct experiences: the gastronomic restaurant Ma. Cuisine, the guest rooms Ma. Chambre, and the summer table Ma. Guinguette. The property has earned a Michelin Recommended distinction, a recognition that reflects the sincerity and skill at work here.
Chef Lucas Di Palma’s cooking is described as personal and instinctive. A former disciple of Alain Ducasse at The Dorchester in London, and a pastry chef who trained under two-Michelin-starred chef Olivier Nasti, Di Palma brings a deep technical foundation to his kitchen. His cuisine is a modern interpretation of French classics, punctuated by nods to his Italian roots – olive oil, citrus, and childhood memories from the Molise region. The result, as the restaurant puts it, is “a cuisine of sensitivity and emotion,” built on the best produce of the Haut-Rhin and the rhythms of the season. This is modern cuisine with an Italian soul, expressed through herbs, juices, and coaxing emulsions.
Manon Nasti, who learned the art of hospitality at the five-star Relais & Châteaux Le Chambard, ensures the experience is as much about feeling welcome as it is about the food. The guest rooms in the main building offer high-end comfort with natural materials and an atmosphere of serene simplicity. In summer, the large grange becomes Ma. Guinguette, a convivial spot for shared plates and unhurried meals. Whether for a tasting menu at Ma.
