Sitting between Guérande and La Baule, in the village of Saillé, brut. is a restaurant that takes its name seriously. The kitchen, led by chef Takashi Aoki, works with local products from the surrounding marshes, sea, and land, crafting a modern cuisine that balances association of flavours with delicacy and expression.
