The story
Naissain opened in 2023 with a clear focus: to put the exceptional oysters and produce of the Arcachon basin on the plate. Chef Thomas Iglesias, then 28 and a local, built his restaurant around the ingredients he knows best. The result is a modern cuisine that is both rooted and surprising – and it earned a Michelin recommendation in 2026.
The restaurant’s name is a nod to the oyster spat, or naissain, that is the foundation of the region’s oyster farming. Thomas’s brother, Quentin Iglesias, is a traditional oyster farmer based in La Teste-de-Buch, and his oysters are central to Naissain’s kitchen. Two types appear: the natural Arcachon oyster, raised on nearby beds, and the Galicia “spéciale”, available in winter, also grown from Arcachon spat. They show up in savoury dishes and even desserts – a playful, confident use of a single ingredient.
The menu changes regularly, driven by what is local and in season. Naissain works with nearby suppliers and lets the chef’s daily inspiration decide. Each visit brings a different composition, built around the same principle: celebrate the product without interference. The cooking is precise, the plates restrained. There is no fixed menu – the day’s offering is a surprise, and that is the point.
The dining room is simple and comfortable, with air conditioning, outdoor seating for warmer months, and a calm atmosphere that suits both lunch and dinner. Vegetarian options are available, reflecting the kitchen’s flexibility.
Naissain is a restaurant that trusts its ingredients. The Michelin recommendation recognises what the Iglesias brothers have built: a place where the oyster’s journey from naissain to plate is honoured in every season.
