The story
In the heart of Gundershoffen, Le Cygne has reinvented itself as a bistronomique table for northern Alsace. Owners Laure and Fabien Mengus, who also run the three-star L’Arnsbourg nearby, wanted to create a place where the region’s culinary heritage could be expressed in a more accessible, everyday way. Executive chef Jean-François Royer, formerly second in command at L’Arnsbourg, now leads the kitchen.
The menu is built around products and the pleasure of sharing. “Working with exceptional products, offering refined and elegant plates at affordable prices – this was an ambition I had long nurtured,” says Fabien Mengus. The cooking is careful, creative, and generous, rooted in terroir but presented with a modern sensibility. The result is modern cuisine that feels both sophisticated and unpretentious.
