The story
La Merise sits in the quiet village of Laubach, surrounded by the rolling fields and forests of Alsace. The restaurant, run by Christelle and Cédric Deckert, describes itself as a place of authenticity and elegance. From the moment you step inside, the atmosphere is one of calm focus – the time to fully experience a singular meal.
Chef Deckert’s cooking is rooted in the region yet unafraid to push boundaries. His menus change with the seasons, built around precise technique and respect for the ingredient. The signature “La Merise en 7 temps” (225€) leads with a series of prémices – small, inventive bites – then moves through dishes like Œuf, Muscade, Gingembre, and Langoustines, Tartare, Moutarde. A tartlet of semi-confited tomatoes with acacia and pomelo follows, then Sandre de l’Ami Henri, described as an homage to Alsace. The main course offers a choice of pigeon breast with horseradish and coffee, or Wagyu beef with alliums and Pont-Neuf potatoes (supplement 45€). A shorter “5 temps” version (175€) is also available, and the lunch menu “Entre Prairies et Vergers” (98€, Thursday and Friday midday) offers a three-course glimpse into the kitchen’s style.
Wine pairings are offered for each menu, and the meal can be extended with a cheese trolley or a dessert called “Mes Meilleurs Souvenirs d’Enfance” with truffles.
The restaurant holds two Michelin stars, awarded for “excellent cooking,” and is also a member of Relais & Châteaux and Les Grandes Tables du Monde. The dining room is understated and comfortable, with large windows that open onto the garden. On warm evenings, the outdoor terrace is a quiet spot to enjoy the Alsatian air.
