The story

Huître Brûlée, Honfleur – Michelin-Recommended Bistro for Seasonal Modern Cuisine

A Conscious Bistro in the Heart of Honfleur

Huître Brûlée describes itself as a "restaurant conscient" – a conscious bistro. Located on rue Brûlée in the historic port town of Honfleur, it offers a modern cuisine that is deeply rooted in the seasons. The short menu changes every three weeks, following the rhythm of local harvests. This dedication to freshness and locality has been recognised by the Michelin guide, which awarded it a Recommended status for 2026.

Seasonal Cooking, Living Wines

The kitchen prioritises seasonal produce, homemade preparations, and fresh ingredients. The wine list is built around "vins vivants" – natural, living wines that complement the food's clarity. The result is a modern cuisine that feels both spontaneous and precise, without unnecessary embellishment.

An Inviting Bistro Setting

With outdoor seating, a private room, and free Wi-Fi, Huître Brûlée is a relaxed spot for lunch or dinner. The service is attentive, the atmosphere unpretentious. It's the kind of place where the quality of the product and the simplicity of the cooking take centre stage.

If the future is in locavore cooking, locavore cuisine is already part of the current landscape at this spot in the beating heart of Honfleur. Inside, the spirit of the place comes from the old stone walls, while the Normandy sky invites itself to the table through the big windows. In the kitchen, Paul Lacheray, Chloé Woetschandt and Hugo Marie recreate the local territory on their beautiful plates: haddock, lentils and an egg dusted finely with kaffir lime zest; a crunchy celery, butternut squash and sunflower seed mixture rounded out by a Gorgonzola cream; a mussel and basil soup that washed over a pollack fillet like a wave; and finally, poached pear aroused with pepper. // E.R.
