A Family Affair in Honfleur's Historic Quarter

On a narrow street in Honfleur’s old town, La Fleur de Sel has been a fixture for nearly 25 years. Chef Vincent Guyon and his wife Annick run the dining room with warmth, while their daughter Caroline—trained alongside top chefs—runs her own patisserie, Pollen, just across the way. The restaurant’s open kitchen lets guests watch the team at work, and the atmosphere is both elegant and convivial, with soft violets, dark beiges, and a touch of rustic charm.

Chef Vincent Guyon: From Noirmoutier to the Côte Fleurie

A Nantes native, Guyon discovered his passion for cooking in middle school. He trained at Les Sorbets on the island of Noirmoutier (the restaurant’s name is a nod to that time), then worked at prestigious houses: Chapon-fin in Bordeaux, Le Centenaire in Dordogne, L’Augeval in Deauville, and, in Honfleur, at L’Assiette Gourmande with Gérard Bonnefoy and at La Ferme Saint-Siméon. At 25, he opened his own place, La Fleur de Sel. By 2002 he had won the regional Trophée du Jeune Chef Champérard, and since 2014 the restaurant has held a Michelin Bib Gourmand—a mark of good quality, good-value cooking that Guyon has maintained with steady, meticulous work.

Seasonal, Local, and Inspired

The menu changes every four months, built around local, seasonal produce from trusted suppliers. Guyon’s cooking is grounded in Norman tradition but lightened and brightened with Asian accents: think beef tartare with oysters, mizuna, caviar vinaigrette, and crispy rice, or roasted turbot with brioche butter. Desserts are a particular strength, with names as enchanting as the plates themselves. The carte is complemented by a carefully chosen wine list. This is modern cuisine that respects its roots while exploring new territory.

Eco-Engagements

The team is committed to limiting their environmental footprint. They prioritise organic, pesticide-free ingredients, source from nearby producers whose work they know firsthand, and cook strictly according to the seasons. It’s a quiet, principled approach that runs through everything they do—from the kitchen to the table.
