The story
La Coopérative sits within Domaine Riberach, a 4-star ecolodge born from the former Cooperative Wine Cellar of Bélesta. The restaurant’s name is a direct nod to the building’s past – a place that once received the village grape harvest. Today, the lofty, loft-style space mixes industrial concrete with warm natural materials, keeping the soul of the old “cathedral of wine” alive.
The estate’s guiding philosophy is “the praise of slowness.” This slow-life attitude carries into the kitchen, where the team practices a committed, eco-responsible approach to modern cuisine. Produce comes from the surrounding vineyards and Mediterranean gardens, and the menu shifts with the seasons to reflect what the land offers. The cooking is precise, refined, and deeply rooted in the Catalan terroir.
Since 2026, La Coopérative has held a Michelin star for high-quality cooking. The award recognises not only the technical skill on the plate but also the restaurant’s broader commitment to sustainable gastronomy – from geothermal energy to a “Biotope” natural swimming pool and rainwater recovery. Wine pairing is a highlight, drawing from the estate’s own vineyards and an interesting, well-curated cellar.
Dining here is unhurried. The restaurant is open for lunch and dinner (closed Monday, Tuesday, and Wednesday lunch). In summer, the outdoor terrace offers views over the vines. Whether you come for a long lunch or a tasting menu in the evening, La Coopérative delivers a quiet, elegant expression of modern French cuisine without pretence.
