The story
For over thirty years, Annabelle and Christian Coutarel have welcomed guests to Le Boudes La Vigne, a hotel-restaurant set on the Place de la Mairie in the quiet village of Boudes, just south of Issoire. The dining room is air-conditioned and wheelchair accessible, and in fine weather the terrace tables offer a relaxed place to enjoy the afternoon.
The kitchen offers two main tasting experiences. The Menu Découverte (€50) moves through an amuse-bouche, a choice of starters such as foie gras “façon torchon” with warm brioche or pan-fried asparagus with dried duck breast, then a fish or meat course – perhaps lightly smoked salmon with lavender butter or a duck breast fillet with foie gras emulsion and truffle aroma. A cheese course is available as a supplement, and desserts include classics like frozen nougat with walnuts and Bard honey, or a verbena parfait on Velay cream. The menu can also be taken as three courses for €40.
The Menu Dégustation (€68) is a longer, fixed sequence for the whole table: a foie gras bonbon with balsamic strawberry, a stew of snails and seasonal mushrooms, omble chevalier from the Barèges fish farm, a palate-cleansing freshness of local Boudes wine, and a blanquette of veal sweetbreads and kidney with sherry vinegar. The meal finishes with a cheese course served as a “glace” or a selection of aged cheeses, followed by a strawberry dessert with verbena and Java pepper.
All meats, poultry and foie gras are sourced from France or the EU.
Le Boudes La Vigne holds a Michelin Bib Gourmand, an award that highlights good-quality, good-value cooking. The award reflects the Coutarels’ commitment to refined, ingredient-led French cuisine without the formality of a starred restaurant. The dining experience is grounded in the produce of the region – the local vineyard of Boudes appears in the dégustation menu – and in the quiet, personal service the couple have built over three decades.
