The story
Tucked beneath the arcades of rue du Minage, Arco adapts its personality to the hour. At midday, the space is warm and relaxed, serving carefully crafted dishes that change weekly with the wind, the earth, and the tides. Come evening, the atmosphere turns elegant, and chef Christopher Trémine and his team unveil a gastronomic face – progressive, audacious, and sustainable. Michelin has recognised this dual approach, awarding Arco a Recommended distinction in 2026.
The restaurant’s motto is produits locaux, saveurs d’ailleurs – local products, flavors from elsewhere. This translates into a modern cuisine that draws on the best of the Charente-Maritime region while incorporating spices, techniques, and wine from around the world. The wine list itself is a globe-trotting selection, carefully chosen to accompany each stop on the menu.
Diners choose from a series of escales – stops on a culinary voyage. The lunch menu offers two or three courses (entrée, plat, dessert) for a fixed price, with vegetarian options always present. In the evening, the tasting menus take centre stage. A six-escale journey might begin with celery root and cress, move to langoustine with carrot and pomelo, then sea scallop with turnip and kumquat. Lamb with pointed cabbage and dark chocolate from Nicolas Berger follows, before a cheese course with condiment, and a sweet finish of kiwi with shiso and coconut. The menu changes seasonally, and a vegan version is available on request.
A matching wine flight offers three or five destinations, each chosen to complement the cooking. For younger diners, a petit voyageur menu provides two courses at a modest price. The team’s attentive service and the relaxed yet refined setting make Arco a place where exploration feels natural – whether for a quick lunch or a long evening of discovery.
