The story
Briemm is the story of a couple. Brice, the artist drawn to simmering pots, and Emmanuelle, the effervescent brunette, met in Saint Barth in 2010. Returning to mainland France, they opened this lively bistro in L'Houmeau, just outside La Rochelle, where their philosophy is simple: a joyful belly and a peaceful mind.
The menu is a daily-changing ode to the market. Lunch offers a great-value ardoise (blackboard) formula, while the evening Briemm menu and à la carte selections showcase precise, seasonal cooking. Starters might include a tartare of pollack and haddock with pomegranate and wakame, or a crab salad with sriracha mayonnaise and a crispy potato rosti. For the main event, a supreme of Challans guinea fowl with parsnip cream and pleurote mushrooms is a standout, as is the daily catch from the local fish auction, simply prepared with a cauliflower and grenobloise sauce.
