The story
Halfway between the Old Port and the central market square, Impressions sits in the historic heart of La Rochelle, facing the cloître des Dames Blanches. Behind its arcade, the restaurant unfolds as an intimate space where noble materials and elegant volumes set the stage. An open kitchen reinforces the warm atmosphere of what the team calls a “petit théâtre” – a small theatre where the produce takes centre stage.
Chef David Etcheverry brings 18 years of Michelin-starred experience from his time in Brittany. His cooking is sincere, placing the product front and centre in its most authentic form. The restaurant’s Michelin Recommended recognition reflects this commitment. A young, dynamic team supports him in the kitchen, the dining room, and the wine cellar, all united by shared values of sharing, transmission, rigour, and precision.
The chef’s cuisine is defined by a thorough search for flavour and clarity in preparation. He works closely with small local producers, guided by quality, environmental consciousness, and philosophy. The menu changes seasonally, drawn from market finds and the day’s imagination. The result is modern cuisine that is both honest and inventive.
For lunch from Tuesday to Friday, the Aparté menu offers a starter, main, and dessert at 35 €, based on daily market purchases. The Acte 1 menu (64 €) might feature a langoustine salad with minted cabbage and light béarnaise, followed by line-caught pollock with pancetta, hummus, and chard. The Acte 2 menu (86 €) expands the experience, with dishes such as a pea and langoustine gaspacho, white asparagus with wild garlic and mimosa, and caramelised veal sweetbread with hazelnuts, white chocolate, and Albufera sauce. A la carte options include blue lobster with Kari Gosse and zephyr courgette, and a dessert of Guanaja chocolate blinis with beetroot and blueberry.
