Lerouge aux Lèvres brings its distinctive natural wine bistro concept to La Rochelle's historic center. Stéphane Lerouge established this cave à manger venue in 2014, drawing on decades of expertise in bottle selection and hospitality.

The Chef and the Kitchen

Guillaume Hilaire directs the culinary program at Lerouge aux Lèvres, bringing techniques honed during his tenure at Guy Savoy. His approach creates well-made plates that match the quality of the wine cellar. Dishes include a creamy burrata paired with eggplant caviar or tender veal rump served with Provencal tomatoes. The kitchen prepares vegetable sides with equal attention, offering a salad of haricots verts, chard, soy-preserved egg yolk, and ham chips.

Space and Setting

The dining room displays a sleek bric-a-brac aesthetic featuring vintage school posters and Formica tables. A lipstick red chair offers seating on the cobblestoned street outside. After popping open bottles for over 20 years, Stéphane Lerouge (ex-Louis XV in Monaco) became a bistro/natural wine shop owner in 2014. Located right near the market, seated in the sleek bric-a-brac space (vintage school posters, Formica tables) or on a lipstick red chair along the cobblestoned street, we happily dug into the well made plates by Guillaume Hilaire (ex-Guy Savoy). The night we went displayed some real first-rate cave à manger fare: creamy burrata with eggplant caviar; a delicious salad of haricots verts, chard, egg yolk preserved in soy and ham chips; tender veal rump with beautiful Provencal tomatoes; a giant cheese platter from L’Epicurium; before a deconstructed cherry cheesecake, for the no-less-thrilling dessert. FYI: the terrace is open from the first day of spring to the last day of fall. // V.B.
