The story
C’est au pied de la Tour de la Chaîne, on the Vieux-Port of La Rochelle, that Les Flots has anchored itself since 1945. Housed in an 18th-century estaminet, the restaurant was taken over in 1997 by a then 22-year-old Grégory Coutanceau – his first venture. Today, its terrace offers an uninterrupted view of the port and the towers, a setting that has made it a local landmark.
Grégory Coutanceau, eldest son of the Coutanceau culinary family, left medical school to follow his father’s path. He trained at Ducasse in Paris and Monaco, and with Darroze, Anton, Lenôtre and Para. His cooking balances modernity and tradition, with an innovative, savoury touch. His credo: put producers and the diversity of regional products front and centre.
Les Flots’ gastronomy is “gourmande et créative”, deeply inspired by the sea and the seasons. The kitchen works with rigorously selected seafood from committed producers, sublimated with precision and respect for flavour. The menu changes with the catch – recent highlights include a Saint-Jacques dinner to close the scallop season, and a spring menu featuring local lamb and farm egg.
The wine list, winner of the Best Wine List in France award in the Gastronomic Restaurants category, is a journey through terroirs, built on personal favourites and emerging talents. Pairings are advised with care and pedagogy.
Les Flots holds a Michelin Recommended distinction, confirming its place among the finest tables of La Rochelle. The restaurant is also noted by Gault&Millau and Tables Gourmandes. Guests consistently praise the warm service, the elegant setting, and the creative, well-balanced dishes.
