The story
In the centre of La Roque-d’Anthéron, Le Jas brings Modern Cuisine back to its Provençal roots. Chef Émeric Corbon, a son of the village, grew up watching his mother cook and his father tend vegetable fields. That childhood shaped a kitchen built on the day’s freshest produce, carefully selected from nearby farmers and market gardeners.
The result is a cuisine de pays – country cooking where the Mediterranean meets the inland terroirs of Provence. Dishes are traditional at heart, but the execution carries the precision that earned this address a Michelin Recommended distinction. Whether you order from the à la carte or choose a seasonal event menu (the Saturday bouillabaisse is a local favourite), every plate reflects the same conviction: honest flavours, generous portions, and respect for the ingredient.
Le Jas describes its vision as “familiale et délicate” – a warm, unpretentious atmosphere where conviviality comes naturally. The dining room and outdoor seating invite you to take your time, and the open kitchen is the domain of Corbon himself, who runs the stove with the steady confidence of someone cooking for his own village.
“Depuis mon plus jeune âge j’ai voulu être cuisinier,” Corbon writes. That lifelong dream became concrete when he returned to La Roque-d’Anthéron to open Le Jas. His cooking is rooted in the memory of home: the aromas of his mother’s kitchen, the fields he knew as a child. Today he works with artisan partners – from local market gardeners to producers listed on the restaurant’s partner page – to ensure every ingredient carries the stamp of the region.
The menu changes with the seasons and the market. Recent highlights from the photo gallery include dishes like fleurs de courgettes (courgette flowers), a refined soufflé de congre, and creative desserts. Event menus, such as the Bouillabaisse served every Saturday or the Easter and Father’s Day specials, give structure to the week. For a more spontaneous visit, the à la carte offers the same commitment to fresh, local Modern Cuisine.
Le Jas also caters, hosts private parties, and offers takeaway – a flexibility that reflects its role as a true neighbourhood restaurant with a fine-dining soul. Note: Le Jas is open lunch and dinner, with extended hours in summer. Reservations are recommended, especially for the Saturday bouillabaisse menu.
