The story

Le Manoir de la Forêt | Seasonal Bistro Dining in La Ville-aux-Clercs

The Kitchen and Its Roots

Le Manoir de la Forêt brings a grounded approach to bistro cooking to La Ville-aux-Clercs. Chef Frédéric Quemin shapes the menu around seasonal produce from the surrounding farms and river networks. His training at Les Frères Pourcel informs a kitchen that balances rustic honesty with precise technique. This local focus recently earned a spot on the Le Fooding roster, confirming the estate’s quiet reputation among discerning travelers. The team prioritizes vegetables and regional dairy while keeping meat and Loire fish in careful rotation.

Standout Plates and Techniques

The kitchen turns humble ingredients into layered plates that reward slow eating. Confit artichokes rest in a rich almond cream finished with a sharp emulsified coffee note. Grilled green asparagus accompany a delicate sea bass fillet and fluffy quinoa. Crispy sweetbreads arrive alongside a vibrant wild garlic purée that cuts through the richness. Each plate highlights how local growers supply the raw material for these quiet experiments.

Room, Wines, and Sweet Finishes

A terrace overlooking a still pond frames long lunches and quiet dinners under the open sky. The dining space sits directly across from a nineteenth-century château, anchoring the estate in regional history. The wine list honors classic bistro standards while showcasing Loire producers who push boundaries. Sweet finishes like French toast with pan-fried strawberries bring the meal back to familiar comfort. Every corner of the property encourages visitors to pause and listen to the woodland beyond the garden walls.

The country escape everyone fantasizes about – now with dinner to match! Opposite the nineteenth-century château and a short wander from the estate’s woodland cabins nestled among the trees, a terrace gazing over a pond sets the scene for long, languid evenings. With a local wine in hand, wait for the calling cards of globe-trotting chef Frédéric Quemin (ex-Les Frères Pourcel) to glide out of the kitchen! That evening, as the sun melted into the water: the season’s final white asparagus cloaked in Comté mousseline and crowned with grilled bone marrow; followed by generous artichoke barigoule, slow-stewed and buried under a tangle of matchstick fries, perfect for chasing every last drop of juice; and, to close, French toast with pan-fried strawberries, as soft and glowing as the sunset itself. A truly edible haven of peace! · Hervé Martin
