In the heart of Laguiole, on the Aubrac plateau, Chef Gilles Moreau runs Hōra, a restaurant that has earned a Michelin recommendation. Since taking over the kitchen in 2010, Moreau has built a personal, ever-evolving cuisine that puts the spotlight on the Aveyron region’s exceptional producers.

The menu is intentionally concise, allowing Moreau to change his offerings frequently with the seasons. His cooking is a direct expression of his roots and the surrounding landscape. He sources beef from the Aubrac herd, poultry from Florentin, organic trout from the Aubrac streams, and vegetables from his own 1000-square-metre garden. Cheeses from Laguiole and nearby farms round out the local bounty. Every ingredient is chosen for quality and seasonality, and all meat is of French origin.

Moreau’s kitchen combines respect for tradition with modern techniques. Sous-vide cooking ensures precise, flavourful results that honour the product. The result is a style of modern cuisine that is both original and grounded—plates that are surprising without being contrived.
