The story
After more than fifteen years working alongside acclaimed chefs such as Philippe Etchebest and Philippe Gauffre, Flavien Valère chose to return to his roots. In Langon, his hometown, he opened L'Atelier Flavien Valère, a restaurant that reflects both his training and his personal vision.
The kitchen focuses on modern cuisine that stays close to the classics. Fresh, high-quality seasonal ingredients drive the menu, which changes regularly. The result is cooking that feels both inventive and grounded – a balance that earned the restaurant a Michelin Bib Gourmand in 2026, recognizing good quality at a good value.
Guests can choose from several formats, from a weekday lunch menu to a more elaborate dégustation. The weekday menu offers a choice of two or three courses, while the evening options include a full tasting menu with multiple courses, cheese included. Each meal begins with an amuse-bouche.
The restaurant's name – L'Atelier – reflects the chef's hands-on approach. The setting is intimate, with outdoor seating available in warmer months. Private parties and seminars can also be hosted, with a dedicated meeting room available.
