The story
At Mirabelle, the dining experience is rooted in the rhythms of the local harvest. Chef Valentin Loison leads a largely female brigade in crafting a Modern Cuisine that is both simple and committed, drawing daily from the surrounding Haute-Marne region. The restaurant occupies a former family home, its high Napoleon-era windows flooding a warm, yellow-and-red dining room with natural light. Worn tables, once the setting for Sunday family meals, add a layer of lived-in history.
The approach is direct and seasonal. A fixed "menu carte" at 39€ offers a choice of three starters, three mains, and three desserts, changing with the chef's inspiration. Recent offerings have included a brioche-wrapped sausage with red wine sauce, spring peas à la française, and a veal tartare with ponzu and wild garlic. Mains might feature lamb from the nearby Multiferm farm or cod with wild garlic, while desserts range from a childhood-inspired rhubarb tart with meringue to a strawberry broth with frozen yogurt and tonka bean. Beyond the printed menu, daily creations are announced "à la voix" — by voice, at the table.
This honest, value-driven cooking earned Mirabelle a Michelin Bib Gourmand, a recognition for good quality at a reasonable price. In warmer months, the experience moves outdoors, with tables set among the living willow arbors in the restaurant's own kitchen garden. It is a place where the meal feels both intentional and unpretentious, anchored by the welcome of the team: Jonathan, Nathalie, Louise, Tom, and Valentin.
