Lebreton’s cooking is built on careful product selection, precise technique, and a respect for seasonality. The kitchen works with local artisans to source ingredients at their peak. The result is a modern French cuisine that honours tradition while leaving room for surprise. Recent dishes have included a panna cotta of asparagus with parmesan crumble and spring vegetables, a tartare of trout from nearby Parné-sur-Roc, and a confit lamb shoulder with rosemary crust and artichokes. Presentation is clean and deliberate, flavours are subtle yet defined.

The restaurant offers a range of formulas to suit different appetites and budgets. At lunch, the “Relais d’étape” menu provides a two‑ or three‑course option starting at €21.50. For a deeper exploration, the “Herbier de l’explorateur” tasting menu unfolds in three to five steps (€36–€46), while the “Menu Exploration” (€61) and the seven‑step “Terra incognita” (€72) allow for a more immersive experience.
