The story
In the small Tarn village of Saint-Lieux-lès-Lavaur, Le Colvert occupies a former bakery built from the red brick and sandstone typical of the Lauraguais valley. The high ceiling, thick walls and warm, earthy tones still hold the quiet of another era, yet the kitchen here is firmly contemporary. This is modern cuisine rooted in the region, earning the restaurant a Michelin Bib Gourmand for its quality and value.
All preparations are done in-house, using produce from the Midi-Pyrénées. Fish comes from the Atlantic and Mediterranean auctions; meat and vegetables are sourced from local suppliers listed on the menu. The cooking is clean and ingredient-led, changing with the seasons and what the market offers. The result is a daily-changing set of formulas and an à la carte that respects the product without unnecessary complication.
The wine list focuses on Gaillac and Languedoc-Roussillon, with most references in organic or biodynamic farming. It evolves with vintages and discoveries. For those who prefer beer, Le Colvert also carries a selection of local brews from the many micro-breweries in the western Tarn area.
When the weather allows, the terrace under a majestic chestnut tree becomes the most sought-after spot. Inside, two separate rooms can accommodate private parties and family gatherings. The atmosphere is unhurried and welcoming – a place where the modern cuisine of the Tarn feels both grounded and light.
