The story

Racine Lectoure: A Precise French Bistro in the Gers

Shifting Formats and Shared Spaces

Racine in Lectoure operates as a streamlined bistro that prioritizes seasonal clarity over theatrical presentation. Chefs Laurence Couillard and Lionel Créteur transformed a former neighborhood spot into a flexible dining room where white walls and grey banquettes set a calm stage. They relocated from Tillac to experiment with longer hours and a lighter pace. The space accommodates solo travelers and families without losing its intimate character.

Precision and Seasonal Cooking

Lionel trained in starred kitchens across Brussels before settling in the Gers to lead this bistro kitchen with clear, generous plates. His approach earned a listing in Le Fooding, which praised the straightforward €22 lunch service. Dishes like Gers beef cheeks served with potato mousseline and garlic mustard sit alongside fresh pea purées topped with seaweed and crispy tuiles. The kitchen also prepares blue lobster tails with crushed vegetables and turbot poached in a tomato fumet when the market supplies are at their peak.

A Continuous Rhythm of Local Flavors

The traditional bistro framework guides the daily rotation of market-driven dishes. Mornings feature regional cheeses and simple sandwiches while afternoons offer preserved goods and small plates. Bread baked locally by Maxime Suiffet accompanies nearly every service. Whether serving roasted Mediterranean tuna with herb bulgur or lavender blanc manger for dessert, the team maintains a steady focus on honest ingredients and unhurried hospitality.

Lionel Créteur from Belgium and Laurence Couillard from Quebec moved their restaurant from Tillac to Lectoure, to a former bistro that’s been given a beautiful makeover – white walls, grey banquettes, modern light fixtures. Donning a gavroche cap, Lionel (ex-Bouchéry and Comme chez Soi in Brussels) has the entire francophone world won over with his €22 menu. For us, the day we went for lunch: a lovely goat cheese faisselle, fresh peas and pea purée, mint, seaweed and a crispy tuile; tasty Gers beef cheeks, tender green asparagus, potato mousseline with garlic mustard and a red wine sauce – we wiped the plate clean with the exceptional organic bread made by Maxime Suiffet; before, for the well-balanced finale, some nice cream puffs flavored with tanacetum. // P.L.
