In the bucolic Vendée countryside, the Logis de La Chabotterie houses a restaurant that feels both timeless and contemporary. The old stone longère has been reimagined with natural tones of blue and green, blending mineral, plant, and water into a serene, elegant atmosphere. It is here, at the crossroads of the Loire and Brittany, that Benjamin and Audrey Patissier have built their gastronomic project – one that earned a Michelin star for its high-quality cooking.

Benjamin Patissier, a Meilleur Ouvrier de France (2015), leads the kitchen with a philosophy grounded in respect for raw ingredients. His career includes stages with Pierre Gagnaire and Anne-Sophie Pic, and a decade alongside Christian Née at La Pyramide. Audrey, with a sommellerie background and experience at Anne-Sophie Pic in Valence, oversees the front of house, championing partnerships with local producers and a refined, attentive service. Their values – respect, transmission, and team cohesion – shape every meal.

Seasonal Menus with Clear Flavours

The cuisine is Modern Cuisine, precise and rhythmic, with bold, clean tastes. Menus change with the seasons. A tasting of the “Menu Découverte” might begin with an amuse, then a perfectly executed Lapin Magistral en effiloché, followed by Blanc de seiche confit et brûlé à la flamme with chard-filled conchiglioni, and a Citron en feuilles à feuilles croquants with hazelnut and Earl Grey sorbet. The more ambitious “Menu Prestige” (128 €) showcases line-caught turbot, Challans guinea fowl, and local strawberries confited with a pistachio crème brûlée.

Throughout, Benjamin Patissier plays with textures and associations – a millefeuille of goat’s cheese with white asparagus velouté, or a dish of petits pois “à la française” with sage-scented poultry jus. The wine list is carefully curated to match.

The restaurant is open for lunch and dinner and offers both indoor and outdoor seating. For those who wish to enjoy it at home, occasional takeaway menus are available. The Michelin star, awarded in the 2026 guide, recognises the consistent excellence of this family-run address – a place where refined cooking and a warm welcome sit side by side.
