The flagship Aroma menu changes with the seasons and is built on a simple formula: starter, main, dessert, or a complete version with cheese. At lunch from Tuesday to Friday, a daily formula offers a more flexible way to taste the chef’s cooking. A children’s menu (up to age 10) adapts the main menu’s dishes in simpler versions.
Starters might include a langoustine velouté with snacked langoustines and a Greek-style brunoise of vegetables, or foie gras—both terrine and pan-fried—prepared in-house, served with confit apple and toasted brioche. Among the mains, a 24-hour cooked porcelet cuissot comes with mogettes, Iberian chorizo, almonds and Kalamata olives; the line-caught fish of the moment is paired with leeks in two ways, ginger, seaweed tartare and a Thai-style broth. Desserts keep the same level of ambition: a soufflé cup of dark chocolate with caramelised hazelnuts, dulce de leche and a whisky cream ice cream from Distillerie du Tigre, or a Saint Honoré reworked with milk chocolate, yellow lemon and peanuts.
