Founders Julien Vahl and Lucie Péneau relocated from Lorraine after building their skills in high-end kitchens alongside Mauro Colagreco. They operate around a single menu that shifts daily based on arrival schedules from Sète fishermen and nearby growers. The couple treats ingredients like collaborators rather than commodities.
The dining service revolves around a tightly edited roster of farmers and artisans supplying the vegetable garden and orchards. Victor supplies summer peaches while François provides poultry from La ferme du Pic. Kévin and Mada manage the adjacent Jardin de Fontanès where herbs and wildflowers are handpicked along country paths. Every plate in this Provençal cuisine reflects that direct supply chain without relying on heavy sauces or complex preparations.
Guests gather in an ancient vinicultural chai defined by exposed timber beams and rough stone walls.
