The story
In the heart of Les Mées, La Marmite du Pêcheur is the project of chef Vincent Pelaia and his partner, maître d’hôtel Chloé Laury. The adventure began in 2019, when Pelaia and his late associate Romain Maldonado took over a restaurant that had been operating under the same concept for over two decades. Today, Pelaia and Laury continue the tradition with a focus on refined, seasonal cooking that balances the bounty of the coast and the nearby countryside.
The restaurant’s signature is bouillabaisse, served as a three-service banquet: beginning with a rich fish soup, then the main event. But the menu, which changes with the seasons, goes beyond the classic. Dishes are built from fresh, mostly local ingredients—vegetables from Le Champ des Ânes in Les Mées, fruit from Le Cabanon in Peyruis, olive oil from the Moulin Arizzi, and meat from Boucherie Giraud in Sisteron. Even the bread is made in-house.
This commitment to quality and clarity of flavour has earned the restaurant a Michelin recommendation. The dining room and terrace in Les Mées offer a setting that is elegant without being stiff, and the wine pairings—available in three formats, from two to four glasses—are designed to match the day’s offerings. For those who prefer a lighter touch, the sommelier’s suggestions by the glass change with the market.
