L'Abissiou: A Michelin-Starred Ode to the Vendée Coast

In a quiet historic lane just steps from the great beach of Les Sables-d'Olonne, L'Abissiou offers an experience that is both intimate and distinctly of its place. The name itself, drawn from the local Sablais dialect for smelt, signals a deep connection to the region. This is a restaurant where the rhythms of the Vendée coast—its tides, its markets, its traditions—are felt in every detail.

Chef Boris Harispe and Mélanie Roussy, who together run the house, bring a poised and personal vision to this Michelin-starred address. Harispe’s path led him through starred kitchens in Savoie and the South of France, including the celebrated Villa Madie and L’Atelier d’Edmond. Here, he and Roussy have shaped a dining room that feels both refined and welcoming: soft colours, comfortable armchairs, and an atmosphere that balances elegance with ease.

The kitchen’s philosophy is grounded in emotion and memory. Harispe works to “arouse surprise, draw from memories, and give birth to emotions,” and his cuisine—best described as modern, with a firm anchor in local ingredients—achieves this through precision and clarity. The menus change with the seasons, ensuring the best of what the coast and countryside offer.

A single tasting menu is offered, available in several formats. The Profondeur, a seven-course journey, is a year-round mainstay. In summer, the nine-course Abysse expands the narrative further, while a shorter four-course Euphotique is available at lunch during off-season. Dishes speak to the kitchen’s touch: langoustine steamed and paired with petits pois and pine-nut-scented jus; artichoke fritters with a warm criste marine mayonnaise; barbue confit with white asparagus, saké lees, and caviar. A roasted pigeon breast from Maine d’Anjou, served with wild herbs, exemplifies the balance of technique and respect for the ingredient.

The wine pairings are thoughtfully chosen, and occasional vigneron dinners—such as a collaboration with Domaine Antoine Sanzay—turn the meal into a shared, celebratory affair.

The restaurant’s setting in a typical Sablais building, near the covered market and the historic church of Notre-Dame de Bon Port, makes it a natural destination for those exploring the town.
