The story
At Le Quai des Saveurs, Chef Maxime Dourdin and his wife Estelle have created a restaurant that feels both personal and polished. After a decade training alongside Guy Savoy, Philippe Labbé, Michel Sarran, and at the George V with David Bizet, Dourdin returned to his native Les Sables-d'Olonne. Here, he channels that classical French technique into a cuisine that is rigorous, unexpected, and grounded in local ingredients.
