Gilles Goujon is a Meilleur Ouvrier de France, rated 19.5/20 and five toques by Gault&Millau. Goujon works with a network of enthusiastic local suppliers. Kid goat, black pork, and lamb appear alongside Mediterranean grouper, eels, and shellfish. The menu changes with the seasons; a lunch offering, “Bienvenue au pays,” might feature aiguillettes of royal daurade in a tomato cocotte, roasted black-pork loin with souffléed crackling, and a “Vrai faux citron” dessert with citrus sorbet and kumquat.
