The story
On the banks of the river Orbieu, in the medieval village of Lagrasse, a historic fortification has found new life. Le Bastion occupies a former bastion of the village’s ancient ramparts, a building classified as a Monument of France. The old stone walls, wooden beams, and artisan-crafted furniture create a setting that feels both timeless and welcoming. Here, chefs Fabien De Bruyn and Valentin Renaud—longtime friends and complementary talents—have united their identities to create a restaurant that is as much about place as it is about food.
Fabien De Bruyn is a fervent advocate of responsible, local cooking. He has worked for years with artisans of the Corbières region, and his previous restaurant, Bistrogourmand Gaia, was awarded a Bib Gourmand by the Michelin guide. Valentin Renaud, a pastry chef by training, honed his craft in Paris with Meilleur Ouvrier de France Laurent Dûchene and in Annecy at the gastronomic restaurant L’Ancolie. Together, they bring over a decade of experience to Le Bastion, their cooking a blend of tradition and modern technique. Their approach is rooted in the seasons and the landscape: short supply chains, local produce, and a deep respect for the environment.
The menu at Le Bastion is a celebration of the region’s bounty. The kitchen describes its food as sometimes creative, sometimes traditional, where “local products, short supply chains, freshness of products, respect for seasonality and the environment” reign. The influence of Auguste Escoffier’s gourmet cuisine meets modern techniques, all delivered with simplicity. A dedicated truffle menu, for example, unfolds over seven courses, pairing ingredients like foie gras, Saint-Jacques scallops, and Black Bigorre pork with the prized melanosporum truffle. Wine pairing is a natural part of the experience, with sommeliers selecting bottles to accompany each dish. This commitment to modern cuisine, rooted in the Corbières terroir, has earned Le Bastion a place in the Michelin guide, a recognition that speaks to the quiet confidence of the cooking.
