The story
Founded in 1848, Logis de la Cadène is the oldest restaurant in Saint-Émilion. Perched on a cobbled square in the medieval village, a UNESCO World Heritage site, the restaurant occupies an 18th-century house with golden stone walls and a wisteria-covered trellis. Acquired in 2013 by Stéphanie de Boüard-Rivoal of the family behind Château Angelus, the former local canteen was transformed into a gastronomic destination. A Michelin star followed in 2017, and the restaurant has held it ever since.
In September 2023, Chef Thibaut Gamba took the reins. His cooking is described as inventive, refined, and delicate—resolutely oriented toward vegetables and seafood. Gamba trained at Lasserre and Pierre Gagnaire in Paris, then with Thomas Keller at Per Se in New York, and in Norway, where he deepened his knowledge of seafood preparation. His style is a modern cuisine that draws on techniques and cultures from his travels, anchored by exceptional local ingredients from the estate’s own farm, La Ferme 1544.
The dining room offers an elegant, timeless atmosphere. A standout experience is the private table set within the wine cellar itself, under stone vaults, where Chef Gamba and sommelier Alexandre Cuvillier collaborate on a four-course menu with prestige wine pairings. The main wine list features several hundred crus from the world’s finest vineyards.
