In Croix, just outside Lille, Arborescence occupies a discreet corner of the former Edgar textile site. There is no neon sign, no obvious entrance — guests follow a path of plants and the sound of bells. This deliberate concealment sets the tone for what awaits: a restaurant that describes itself as "a theatre, a memory in action, a dream."

Chef Félix Robert grew up in Steenvoorde, tending a kitchen garden that first sparked his connection between plants and poetry. He refined his craft as a pâtissier at La Grenouillère with Alexandre Gauthier, then worked fish and sauces at the legendary Troisgros and at Ryugin in Tokyo. The idea of opening his own restaurant never left him. It became real when he met Nidta Robert Prathum, a Thai-born sommelier who grew up on a farm in Uttaradit, learning to taste the fruits, roots and plants around her. Orphaned at fourteen, she earned a scholarship to study in France, where she and Félix met at hotel school in Le Touquet. Arborescence was born from their crossed memories — two individualities, one shared vision.

Cuisine imaginaire

The kitchen describes its work as "imaginary cuisine" — an abstract alchemy where words like iodine, transparency, cloud, moonlight, and blossom guide the creation of each dish. The result is a tasting menu built on precision, lightness, and fragility. Three narrative menus, named Pensée, Songe, and Rêve, guide diners through a progression of flavours rooted in the sea and the seasons. Supplements include sea urchin, lobster, pigeon, and a Laab of veal sweetbreads. Nidta’s beverage pairings draw on trusted winemakers and inventive non-alcoholic creations, offered in three, five, or six-glass formats.

This is a cuisine that treats the meal as narration — a fiction made of memories and landscapes, tenderness and poetry. The restaurant’s recognition with a Michelin star speaks to the precision and imagination at work here, but the experience is less about the award than about the story unfolding on the plate.

The restaurant itself is a "hidden place", tucked away in a former industrial site near the Croix train station. Its atmosphere is intimate, with care given to every detail. Arborescence is open for lunch from Friday to Sunday, and for dinner from Wednesday to Sunday. The kitchen is inspired by seafood, and the team asks guests to respect the experience by leaving young children and pets at home. For those who wish to prolong the encounter, the boutique offers hand-drawn menu leporellos, illustrated stories, and a book by Hélène Luzin featuring the chef among 50 rising stars of French gastronomy.

Arborescence is not a restaurant you stumble upon — it is one you seek out, and that search is part of the journey.
