The story
Bleu canard in Lille operates as a vegetable-forward creative kitchen that balances plant-based plates with occasional meat courses. Rémi Aboudiab established the long, narrow space near his earlier vegan project Pickles, while Chef Ryo Nakamura guides the daily menu around extremely local market produce. The team prepares everything in-house using fresh ingredients, shifting the seasonal focus depending on what arrives at the door. Living wines run alongside the food to match the bistronomic pacing, while the terrace extends the dining area when the weather turns mild.
The menu changes with the market rhythm, yet certain preparations consistently highlight the kitchen’s technique. During peak summer days, a refreshing watermelon gazpacho appears alongside basil oil and a crisp cucumber-watermelon brunoise. Raw tomatoes arrive stuffed with firm tofu and slow-roasted tomato pieces, served next to a buckwheat, zucchini and star anise salad. These vegetable-focused compositions rely on precise cuts and balanced acidity rather than heavy sauces.
Visitors enter a deliberately nostalgic dining room defined by its elongated layout and tactile details. Floral wallpaper covers the walls while Moleskin banquettes provide comfortable seating along the sides. Fringed light fixtures cast a warm glow over the tables, complementing the street-facing terrace available during warmer months. The design supports a relaxed dining pace where conversation flows easily between courses.
