The story

Brigand Bistro in Lille | Award-Winning Neighborhood Dining

The Kitchen and Its Founders

Brigand in Lille offers a relaxed take on bistro cooking through the lens of Florine Verhellen and Frédéric Le Bordays. Both professionals previously worked at L’Artisan in Paris before establishing this neighborhood spot, earning a recent Le Fooding listing for their authentic approach. The menu rotates every fifteen days to highlight seasonal produce, featuring items like vitello tonnato with fennel or soba noodles paired with a confit egg yolk and tahini sauce.

Seasonal Sharing Plates

Evenings revolve around a selection of small plates designed for sharing across the table. The kitchen builds robust flavor profiles starting with cured meats like chorizo de Bellota or a rich pâté Lorrain spiced with green peppercorns. Vegetable-forward options appear frequently, including an ajo blanco chilled soup served with radish salad and sesame simit bread. This careful balance ensures the bistro menu never feels heavy during a long lunch or dinner service.

The Room and Its Sounds

Light hardwood floors stretch beneath high barstools near a dimly lit counter where guests often gather. The space feels intimate behind large Flemish-style windows that frame the street outside. Staff pour living wines directly from bottles selected by Le Bordays, prioritizing earth-driven vintages over rigid winemaking codes. This neighborhood bistro layout encourages lingering conversation without forcing formal dining standards.

A word to the wise! You’ll have to venture off the beaten track in central Lille if you want to walk through the doors of this well-named den: the Bistrot Brigand (or the bandit’s bistro, in English), which steals its customers’ hearts – without robbing them in the process. The brains behind this operation? Florine Verhellen (in the kitchen) and Frédéric Le Bordays (in the wine cellar), both of whom worked at L’Artisan in Paris before opening this old-fashioned bistro – light hardwood floors, a dimly lit bar, high barstools. The night we went, all of the following paraded out of the kitchenette: titillating roasted beets with smoked cream, energized by a blackberry vinaigrette and a seed praline; incredible braised pointy cabbage slathered in seaweed butter and a cream of lemon confit; a comforting pork belly sandwich with coleslaw-style carrots, a very tasty mayonnaise and fried shallots; before a spellbinding chocolate ganache made with a fig leaf oil. At lunch, in addition to the classic lunch menu, Florine also serves a “briquet,” or a baguette sandwich stuffed full of charcuterie, vegetables and cheese. // Sofia Sétif
