The story
Chez Georges in Lille operates as a modern bistro inside a restored seventeenth-century house on Rue Saint-André. Chef Georges built his reputation co-founding Les Toqués in 2019 before launching his own concept at EPICE. He met sommelier Diane in 2023, and together they reimagined the ground floor for daily service. Their shared goal centers on pairing fresh regional ingredients with unexpected global techniques.
The kitchen leans heavily on toasted spices and layered sauces to elevate simple vegetables and proteins. A silky cucumber gazpacho carries nigella seeds while a thin tomato tart blends slow-roasted fruit with rose harissa. Smoked garlic from Arleux forms the base of a toum served over carved potato roses, and bluefin tuna arrives dressed with chili oil and sesame. Evening finishes arrive as a cardamom-poached pear tiramisu resting on vanilla mascarpone.
Ochre walls and burnt-orange tiles frame the counter dining area where guests watch the open kitchen work. Le Fooding highlighted this ochre and terra cotta space for its energetic pacing and confident seasoning choices. The compact layout keeps conversations close while servers move efficiently between the pass and the tables.
