At OVAL (by Val d'Auge) in Bondues, just outside Lille, chef Christophe Hagnerelle leads a kitchen that writes its story fresh every week. Trained under luminaries such as Joël Robuchon, Robert Bardot, and Gérard Boyer, Hagnerelle brings a refined yet spontaneous touch to Modern French cuisine. His cooking is grounded in the daily market — no fixed carte, only a seasonal, weekly menu built around the best produce of the Nord region.
The restaurant describes its approach as "every week we write our history," and the philosophy shows in a menu that changes constantly. During the day, a quick lunch option sits alongside a fuller three- or four-course gastronomic experience.
