Gérald Guille describes his approach as instinctive, passionate, and free. He draws on a library of flavours built over years of experience, constantly seeking surprising but harmonious combinations. Seafood plays a privileged role – a tribute to his roots on the Opal Coast. The result is a cuisine that is sincere, innovative, and unexpected, delivered with a relaxed yet rigorous spirit.
