At Aux Saint Jus in Lisieux, chef Pablo Jacob brings his Colombian background to a quietly focused bistro. He draws on training from Refugee Food, Bel Ordinaire, and Douze while sharing the floor with natural wine specialist Guillaume Armand. The two originally met during a lunch service at a different venue, and their partnership now drives a deeply local approach across the Calvados department.
The seasonal menu relies on straightforward techniques and honest ingredients. Diners frequently begin with smoky roasted cauliflower paired with toasted almonds and a softly boiled egg, then move to an earthy lentil dal enriched with crisp kale and bright Shira spices. The kitchen also serves Bayeux pork resting in a smooth red kuri squash purée topped with locally gathered mushrooms.
Timber paneling lines the walls and keeps the dining room feeling relaxed and unhurried. Armand selects biodynamic bottles that mirror the bistro’s emphasis on regional produce rather than competing with it.
