The story
In the quiet village of Le Breuil-en-Auge, just outside Lisieux, Le Dauphin is a restaurant where tradition and modernity meet. The house describes itself as a place where refined cuisine is built from the best local, seasonal produce — and the menu bears that out.
The chef works with clean, precise flavours. Starters might include marinated weever fillets with melon, cucumber and Lardo di Colonnata, or a smoked eel dish with white asparagus, wild garlic and a rich eel cream. Langoustine appears wrapped in kataifi pastry, roasted in butter, with confit carrots and a citrus gel. There is also a vegetarian option: matured carrot in multiple preparations, with a carrot mousseline, hazelnut potatoes and fermented carrot juice.
Main courses are equally grounded in the region. Magret de canard is lacquered and sliced thin, served with port-cherries, beetroot ravioli and poultry jus. The foie gras, poached and then pan-seared, comes with parsley root, Williams pear in Sauternes, and a Calvados reduction from the local Château du Breuil.
The dining room is warm and welcoming, suited to both romantic dinners and business lunches. The restaurant can accommodate groups of 30 to 40 for private events. A private room is available.
Le Dauphin has earned a Michelin Recommended distinction, a recognition that speaks to the consistency and quality of its modern French cooking. It is a restaurant that lets the ingredients speak — and the Pays d’Auge terroir is very much present on the plate.
