The dining area sits directly across from the cathedral and features wooden rafters alongside original tile floors that anchor the room's character. Guests settle into Moleskin leather banquettes that offer comfort during long conversations, while a dedicated stage invites musical performances throughout the evening. The bistro encourages a relaxed pace, making the space suitable for families and friends who appreciate a lively yet intimate setting.

United in both their personal and professional lives, Mathieu (in the kitchen) and Mélanie Desplas (in the dining room) combined their first names when baptizing this old-fashioned spot located across from the cathedral, with wooden rafters, original tile floors, Moleskin leather banquettes and a stage for musical performances. Expect cuisine that has deep roots in the local terroir: homemade pâté and foie gras, pan-fried duck breast, chocolate mousse… And the day we went for lunch, we opted for the burger-dessert combo meal! Buns from the Délices de la Fontaine bakery, blonde d’Aquitaine ground beef from La Ferme de Choucou, bacon from La Ferme de Lacassagne, sheep’s milk cheese from the Pyrenees, pickles, ketchup from the Ariège and caramelized onions, served with excellent organic roasted potatoes and salad; before a maddeningly good strawberry tart with a crispy crust, titillated by a slice of lemon marinated in olive oil and thyme. // Gérard Roubeix
