The story
In the centre of Lorgues, on the Place Georges Clémenceau, La Table de Pôl is a place where a decade of history meets a fresh new chapter. Founded in 2009 by Raphaël Revalor and named after his son, the restaurant was taken over in 2022 by chef Julien Collard and his partner Rachel, who had already been running the kitchen and the dining room since 2018. Together, they have carried forward the convivial spirit of the house while putting their own stamp on it.
Julien trained at Alain Ducasse’s Abbaye de la Celle, and he brings that rigorous, ingredient-led philosophy to a cuisine rooted in the Var region. The menu changes with the seasons, drawing on local producers to create food that is both generous and refined, balancing the flavours of the Mediterranean coast with the inland Provençal countryside. Diners will find a modern style that is anchored in tradition — what the restaurant describes as a cuisine "between land and sea." Signature dishes are kept on the carte for regulars, ensuring a sense of continuity alongside the seasonal shifts.

The team is small and close-knit, led by Julien in the kitchen and Rachel in the dining room, with Iestyn as second chef, described as the steady presence that balances a young brigade.
